Pizza Dough and Squats

Pizza Dough and Squats, what has my life come too?

I finally made my own pizza dough and I am hooked! It is so easy and comes out perfect! I made two batches, used one for a pizza and the second I split and saved some for another day. Then all I had to do was come home take the dough out of the fridge and make the pizza, or in my case pizza roll ups :) I also made calazones with the same batch :)


I also started my Squat challenge yesterday. 30 Squats, not so hard. Just wait to see how my attitude changes when I get into the 100s! 

EMILY! You better be doing your squats! Today we are on 40!

Pizza is the best cure for "The Mondays"


Pizza makes everything better, right? Even a case of the Mondays? I think so. 

Last night I tried my hand at some home-made dough. Now I get home around 6pm and I knew the husband was hungry because I was starving. So I made a bowl of lite butter/salt popcorn to hold us both off, because I knew this pizza was going to take a bit.
Yummy!

Okay, back to the pizza. When I jump into something I jump head first. So I made stuffed crust pizza...mmm. 





My Conclusion:

  • Great recipe
  • Simple
  • Thick dough
  • easy
The recipe is so simple and easy. 
3 cups flour
1 packet of dry active yeast
1 teaspoon sugar
2 table spoon olive oil
1 cup of warm water
a pinch of basil

Mix the dry stuff first then throw in the wet stuff. Mix it well then let it sit for 10 to 30 mins. I would suggest throwing it in the fridge for bit as well. Kneed the dough on a floured surface for 1 to 2 mins. Then spread onto floured pizza pan! I wrapped some mozzarella sticks into the ends to make it stuffed. I had to break the pieces in two to make them curve into a circle. I popped just the crust into the oven to let it set for 4 mins. After that, put your toppings on bake at 375 for 20 mins. 
Ta Da! Pizza!

During this time my husband comes over
"what's taking so long?" 
"I made my own dough." 
"and..."
"I made it.." 
"Like from scratch? Like flour, yeast and let it rest?"
"Yes" I couldn't help but start to laugh now...poor guy has to deal with me everyday. 

Two things I will do for next time: 
  • Get cheese that will melt better, the cheese I used didn't want to melt... I used "Fancy" Mozzarella...ooh la la 
  • Make the dough thinner/possibly let it set in the fridge longer.

Good Morning! Positive Thought of the Week!

Hey there! So on my long ride to work this morning KSBJ was streaming though my speakers and their "Positive thought of the day" was:

Philippians 4:12-13
 I know what it is to be in need, and I know what it is to have plenty. I have learned the secret of being content in any and every situation, whether well fed or hungry, whether living in plenty or in want. I can do all this through him who gives me strength.
I can do all things though him who strengthens me. 

They also went on to share a story of a pastor and life coach. The two the of them responded to people wanting to make positive changes in their lives. Their solution was to pick one word you wish to see  in yourself by the end of the year. The goal is to think about the word daily and apply it to your everyday life. This couldn't come at a better time for me. I was just thinking to myself last night that I need to think of one positive thought every morning to help kick start my day.

For me my biggest issue is Procrastination. 
So I looked up what the opposite of this word is
Do
Expedite
Carry out
Complete 
Continue
Finish

HMMM, they are all so good. For some reason Complete, Continue and Finish sound like a charm to me. Or maybe Continue to Finish. 

Continue to Finish and make it Complete.

That's it. 

Okay soo I picked three words...Gives me more limitations :)

Mistakes Happen...A lot.

I can't stop making Mistakes! It is going to happen, with any new job but MAN it is such a downer; especially when, at my old job I was THE IT person. I knew everything, did everything and was everywhere. It is difficult to start all over again. I can't stop obsessing over every mistake I make.


My husband helped with some much needed words of encouragement,"You'll get it down soon enough" 

I hope so. I don't like this feeling.

Brothers and sisters, I do not consider myself yet to have taken hold of it. But one thing I do: Forgetting what is behind and straining toward what is ahead. 

Do you tend to get caught up in all your mistakes instead of looking ahead? I sure do. 

Another mistake I have seen myself making a lot lately is this


I find I am so eager to be heard that I do not take the time to really hear others. Something to work on!

Test Run!


Me this morning before my big test run. As my previous post stated I wanted to try riding my bike to work. A whole 18 miles one way! I wanted to prove to myself I could do it and I really enjoy riding. Well it turns out I am a little crazy! :) 

While I don't think I will make riding my bike to work a ritual, I am not completely ruling it out. I do plan to do it at least once a month or more. While I am talking about goals I want to list a few fitness goals. 
  • Ride 10 mile at least once a week. 
  • Ride to work at least once a month.
  • No more fries, cheeseburgers or chips.
NOW let me tell you about my adventure :D 

First thing in the mooring I realized I forgot a few things so I went to the store to get them. I didn't get to leave my house til 9:40am. The ride there was great! Houston has a ton of great riding trails. Going north is problematic. The roads aren't exactly bike friendly so I had to cut through neighborhoods, which added more time. I made it to my work in 2 hours, and here is the proof!

When I arrived I stopped at a Starbucks to refuel with some lunch! 

I rested for about an hour. When I ride to work in the future I will rest for around 8 hours instead of 1 so the ride home was rough. not to mention my left pedal was coming lose, not lose like the pedal lose but lose like the part connected to bike; that makes it crank. Yep, I couldn't go 2 mins with out stopping and tightened the bolt down... took me an hour just to find an auto zone to fix it. I tried to keep my spirits high :) I still consider the ride to be a great one :D 36 miles total! 

Remember a few post ago, I entered a book I made into a crafting contest. Well I got 5th! I am happy I placed, however I am little bummed. I spent a lot of time on it....ah well next time!
